Chef's dinner, a 20-course dinner, is an annual tradition at Haaheim, where unique ingredients and flavors are selected and combined into an exciting menu.
-Potato chips with chicory roe and sour cream
-Salted and gravad kval on rye flatbread on Svedjerug, tomato caviar and herb mayonnaise
-Smoked herring with grilled rye bread, egg salad and crispy fried capers
-Airy potato cream with crispy cured ham from Haaheim on dry bread
-Scallop tartare in tart shells with capelin roe and mayonnaise
-Crayfish with Jerusalem artichoke chips, crayfish mayonnaise and ponzu sauce
-Lubbesild with celery, a pinch of rum and iron beet caviar
-oat waffle with salmon, lime caviar and sour cream with horseradish
-Beetroot tartar, pickled honey rind with smoked mayonnaise
-Cod with apple butter and broccolini
-crispy cod skin with smoked mussel cream
-brandad with crispy capers, shallots and parsley butter
-Smoked halibut with pickled mustard seeds, crispy rye and lemon butter
-Duck breast with celery root puree and blackcurrant sauce
-Lamb fillet with parmesan fried Brussels sprouts and cloud sauce
-Venus fillet with juniper beetroot cream and pickled cranberries
-Homemade brown cheese with pickled sea buckthorn and roasted hazelnuts
